Superfood Salad with Goji Berry Dressing

Superfoods contain high levels of numerous antioxidants and provide endless health benefits consumed in their whole food and therefore most easily assimilating form

12 oz organic wild arugula, baby kale or any combination

  • favorite sources include maggie’s, coleman and flora bella farms

4 oz fresh sunflower sprouts

  • Available at most organic grocers

6 oz fresh organic blueberries

  • Favorite sources include forbidden fruit orchard, murray’s and pudwill farms

4 oz shelled hemp seeds

  • Look for nutiva or hemp hearts brands

4 oz toasted walnuts

  • Toast raw walnuts on a rimmed baking sheet at 350 for 4-5 minutes. do not burn!

4 oz shaved ricotta salata cheese (optional)
goji berry vinaigrette (recipe follows)

  • Warm 1/3 cup red wine vinegar and place in your blender
  • Add 3 tablespoons dried goji berries and allow to soften for 30 minutes
  • Add 1/2 teaspoon dijon mustard, 1/2 small shallot and a pinch of sea salt

Blend until smooth and then, with motor running, slowly stream in 2/3 cup of a neutral oil like grapeseed, sunflower or algae oil

Note: algae oil (thrive brand) is a newfound favorite as it is heart healthy, has a high smoke point and neutral flavor. I find it at my local bristol farms

Optional: Substitue 1-2 tablespoons of the oil for a flavored oil like toasted pumpkin seed oil, walnut oil, pistachio oil or almond oil

  • Taste the dressing and adjust the seasoning to your liking with salt, pepper and honey or agave nectar
